EATING CHINESE
Laurie Taylor explores the role of British courtship practises in the explosion of Chinese restaurants and finds out about eating, diet and culture when he talks to Dr J.A.G. (Bill) Roberts, a historian of Western perceptions of China and Professor , an expert on the sociology of all manner of foods.
Together they sample the different ways different cultures develop specific cuisines and some of the factors which lead to their mutation in foreign climes. For the Chinese in Britain, one enormous influence was inevitably the limitations of British taste buds.
