Anna's Leftover Focaccia

Leftover Focaccia Recipe

Ingredients:

400g Strong Flour

7g Yeast

5g Sugar

10g Salt

300ml Warm Water

Leftover vegetables and herbs of your choice (for decoration)

Method:

1) Pre heat the oven to 165c

2) Mix yeast sugar with a few tablespoons of water. Mix and leave to foam.

3) Make a well in the centre of the flour, then pour the wet mix in. You can knead the dough on a work surface with a drop of olive oil or whatever oil you have. You can then leave your dough to prove.

4) Line a baking tray with some cling film and coat with oil to prevent the base from drying and creating a skin.

5) Once your dough is proved, knock it back and let it prove for another 10-20 minutes.

6) After proving, use your leftover vegetables to create a design on top of the dough.

7) Place your bread into the oven and bake at 165c for 30 minutes. A good tip is to have a tray in the oven whilst it is preheating, and then place your focaccia tray on top of it, this will result in a better bake as soon as the dough is placed in the oven.
