Anna Haugh's microwave recipes

5 minute posh fish parcels

Ingredients:
4 Cold sliced new potatoes
2 Handfuls of frozen peas
Pinch of salt
Tarragon
Cod fillet
Lemon zest

Method:
- Place the cold boiled new potatoes in a layer on a piece of greased proof paper
- Add a couple of handfuls of frozen peas
- Add a pinch of salt and tarragon
- Place the cod fillet on top of the potatoes and peas
- Finish with lemon zest
- Seal the greased proof paper around the fish to create a parcel to trap the steam in
- Cook in the microwave for about 5 minutes (Keep an eye on it)

3 minute chocolate sponge pudding

Ingredients:
2 Tbsp cocoa powder
4tbsp sugar
4tbsp flour
1 pinch of salt
3tbsp milk
3 tbsp oil

Method:

- In a large mixing bowl add the cocoa powder, sugar, flour and salt and mix well.
- Add the oil and egg and mix with a whisk
- Place into a greased microwave safe silicon cake mould or a mug
- Cook in the microwave for 1:30-2mins (Keep an eye on it)
- Sprinkle with icing sugar to serve
