Anna's Basil & Nasturtium Pesto Pasta
INGREDIENTS
- Basil and nasturtium leaves (50:50 ratio)
- Pine nuts
- Chopped garlic
- Olive oil
- Parmesan cheese (can be substituted with a vegan alternative)
TO SERVE
- Cooked fusilli pasta
- Nasturtium flowers (optional)
METHOD
1. For this 5-ingredient pesto simply combine the basil and nasturtium leaves, pine nuts, chopped garlic, oil and parmesan together using a pestle and mortar, a blender or a food processor. For a basic basil pesto remove the nasturtium leaves and double the amount of basil leaves used.
2. Stir the pesto through cooked fusilli pasta and serve garnished with more parmesan cheese a edible nasturtium flower (optional).
3. This pesto recipe can be used time and time again in dishes. Cover chicken breasts in it and pop them in the oven, drizzle over bruschetta or spread on a toasted cream cheese bagel.
