Βι¶ΉΤΌΕΔmade Spiced Chutney
Ingredients (makes 6 glass jars):
- 1kg Bramley apples, thinly cubed
- 2 red onions, finely chopped
- 350ml cider vinegar
- 300g dark brown soft sugar
- 175g dried cranberries
- 1 tsp ground allspice
- 1 tsp ground nutmeg
- 1 ½ tsp dried chilli flakes
- 10cm fresh root ginger, peeled and finely grated
- 6 garlic cloves, finely chopped
- 2 tsp salt
- 1tsp black pepper
Method:
- Peel, core and finely dice the apples, and put into a large, heavy based pan. Throw in all the other ingredients. Stir.
- Heat up to a high temperature. When it starts to bubble, reduce slightly. Keep on stirring gently. If it is really bubbling, reduce the temperature. You want to see it bubbling very gently.
- Keep that going for about 30-45 minutes until it is fairly thick.
- To check whether the chutney is ready, drag a wooden spoon along the base of the pan to form a channel. If the channel holds for a short while, then your chutney is ready. If it is not, continue cooking.
Top Tips:
- Ladle into sterilised jars and seal. Allow to cool completely and set aside to mellow for at least two weeks before opening.
- To sterilise, wash jars and lids in hot, soapy water. Rinse thoroughly. Place on a baking tray and dry completely in a preheated oven (140c) for about 10 minutes.
