Briony's Parsnip Coleslaw
Serves 8-10 people.
INGREDIENTS:
- 2-3 parsnips
- 2 carrots
- ½ red cabbage
- Stem of broccoli
- 1 red onion
- 2 sticks celery
- 50g mangetout
- 50g mayonnaise
- 50g plain yogurt/crème fraîche or more mayonnaise
- 2 tbsp apple cider vinegar/red wine vinegar
- ½ tsp ground nutmeg
- Salt and pepper to taste
METHOD:
- Top, tail and grate the parsnips and carrots. Thinly slice the red cabbage, red onion, celery, broccoli stem and mangetout.
- Put all the veg in a bowl then add the mayonnaise, yogurt/crème fraîche, vinegar, nutmeg, salt and pepper. Mix well to combine.
