Briony's Beetroot & Orange Brownies

Ingredients:

  • 200g orange chocolate
  • 100g spread/butter
  • 450g cooked beetroot
  • 1 tsp orange extract
  • 3 large eggs
  • 230g golden caster sugar
  • 100g plain flour
  • 100g cocoa powder
  • 1⁄2 tsp baking powder

To finish (optional):

  • 100g orange chocolate
  • 2 tsp orange zest

Method:

1. Pre-heat your oven to 160C fan/180C. Grease and line a 20x30cm tin.

2. Chop the orange chocolate into pieces and place in an oven proof bowl with the
spread/butter. Place in the oven for 5 minutes until melted and mix together.

3. Blitz the beetroot and orange extract until smooth using a blender or stick blender.
Add the melted orange chocolate and butter mixture then mix to combine.

4. Whisk the eggs and sugar together until thick and pale, about 4 minutes.

5. Gently fold the beetroot mixture into the egg mixture. Sift over the flour, baking powder and cocoa powder then fold in until combined. Pour into the prepared tin and bake for 35-40 minutes until a skewer comes out mostly clean.

6. Slice and serve or, alternatively, melt some more orange chocolate, drizzle over the brownies and sprinkle with orange zest.
