Briony's Carrot and Orange Tart

Ingredients:

  • 6 carrots, peeled and cut in half lengthways
  • 1 tbsp olive oil
  • 15 x 12cm rectangle of puff pastry from a 320g roll
  • 3 tbsp low-fat cream cheese
  • zest of 1 orange
  • 1 tsp cinnamon
  • 1 tbsp honey
  • seeds (optional)

Method:

  1. Preheat the oven to 180°C fan/200°C. Line a baking tray with parchment paper.
  2. Top and tail the carrots then cut in half lengthways. Place in a bowl and add the honey, olive oil, cinnamon and the zest of the orange.
  3. Mix the carrots until coated then tip onto a baking tray. Place in the oven for 20 minutes, give them a shake after 10 minutes.
  4. Unroll the puff pastry onto the prepared tray. Use a knife to score a border about 1 inch from the edge then use a fork to pierce the centre area. Place in the oven for 10 minutes.
  5. Flatten the centre of the pastry then spread over the cream cheese. Top with the roasted carrots. Beat the egg and brush over the edges of the tart using a pastry brush.
  6. Bake for a further 10 minutes. Top with roasted seeds or crushed walnuts.
