Briony's Carrot and Orange Tart

Ingredients:
- 6 carrots, peeled and cut in half lengthways
- 1 tbsp olive oil
- 15 x 12cm rectangle of puff pastry from a 320g roll
- 3 tbsp low-fat cream cheese
- zest of 1 orange
- 1 tsp cinnamon
- 1 tbsp honey
- seeds (optional)
Method:
- Preheat the oven to 180°C fan/200°C. Line a baking tray with parchment paper.
- Top and tail the carrots then cut in half lengthways. Place in a bowl and add the honey, olive oil, cinnamon and the zest of the orange.
- Mix the carrots until coated then tip onto a baking tray. Place in the oven for 20 minutes, give them a shake after 10 minutes.
- Unroll the puff pastry onto the prepared tray. Use a knife to score a border about 1 inch from the edge then use a fork to pierce the centre area. Place in the oven for 10 minutes.
- Flatten the centre of the pastry then spread over the cream cheese. Top with the roasted carrots. Beat the egg and brush over the edges of the tart using a pastry brush.
- Bake for a further 10 minutes. Top with roasted seeds or crushed walnuts.
