Anna's Cheese Stuffed Meatballs
INGREDIENTS
- 800g beef mince
- 250g of any leftover cheese (cheddar or brie works well)
- 60ml water
- 2 eggs
- 3 big pinches of salt
- 1 tablespoon smoked paprika
- 1 tablespoon Cajun seasoning
- 3 big handful breadcrumbs
- 2 carrots grated
- 2 onions grated
METHOD
- Preheat the oven (180 degrees), grate the carrot and onion and cut the cheese into cubes (approx. 15g per cube).
- Mix the mince, grated carrot, grated onion, seasonings, salt, pepper, breadcrumbs, eggs and water in a bowl.
- Pull out meatball-sizes portions of the mince mix and wrap it around the cheese.
- Bake the meatballs in the oven for 11-15 minutes. Be aware that with stuffed meatballs you want to fiddle with them as little as possible to minimise the risk of the cheese squeezing out.
- Once cooked, top top with gravy and leftover cranberry sauce OR:
- Whilst the meatballs are cooking, make a simple marinara sauce by adding oil to a pan with chopped/grated garlic, fry until fragrant, add a tin of chopped tomatoes, season with salt, pepper, sugar and reduce.
- Serve and enjoy!
