Anna's Cheese Stuffed Meatballs

INGREDIENTS

  • 800g beef mince
  • 250g of any leftover cheese (cheddar or brie works well)
  • 60ml water
  • 2 eggs
  • 3 big pinches of salt
  • 1 tablespoon smoked paprika
  • 1 tablespoon Cajun seasoning
  • 3 big handful breadcrumbs
  • 2 carrots grated
  • 2 onions grated

METHOD

  1. Preheat the oven (180 degrees), grate the carrot and onion and cut the cheese into cubes (approx. 15g per cube).
  2. Mix the mince, grated carrot, grated onion, seasonings, salt, pepper, breadcrumbs, eggs and water in a bowl.
  3. Pull out meatball-sizes portions of the mince mix and wrap it around the cheese.
  4. Bake the meatballs in the oven for 11-15 minutes. Be aware that with stuffed meatballs you want to fiddle with them as little as possible to minimise the risk of the cheese squeezing out.
  5. Once cooked, top top with gravy and leftover cranberry sauce OR:
  6. Whilst the meatballs are cooking, make a simple marinara sauce by adding oil to a pan with chopped/grated garlic, fry until fragrant, add a tin of chopped tomatoes, season with salt, pepper, sugar and reduce.
  7. Serve and enjoy!
