Briony's Parsnip Gratin

INGREDIENTS:

  • 1kg parsnips
  • 300ml crème fraîche
  • 100ml milk
  • 4 sprigs fresh thyme/1 tsp dried thyme
  • 150g grated cheddar cheese.


METHOD:

  1. Oven on to 180C fan/200C. Top, tail and peel the parsnips, keep the peel for later. Thinly slice the parsnips into rounds and place in a medium sized casserole dish. In a bowl, mix together the crème fraîche, milk, thyme and 100g cheese. Pour over the parsnips then cover the dish with tin foil and bake for 1 hour.
  2. Place the peel on a baking tray, drizzle with olive oil and season to taste. Mix up the peel with the oil, spread out evenly and place in the oven for 10-15 minutes until crispy. Remove and set aside.
  3. After an hour in the oven, remove the parsnip dish, cover with the peel and remaining cheese. Return to the oven for 15 minutes until topping is melted and crispy.
