Fluffy Pancakes with Caramelised Banana
INGREDIENTS - SERVES 4
300g Self-Raising Flour
40g (around 6tsp) Sugar
1tsp Baking Powder
340ml Milk (you could use water or a milk alternative)
1-2tsp Poppy Seeds
4 Bananas (cut lengthways and then in half again)
200g Icing Sugar
50ml Water
1 Pinch of Salt
METHOD
1. Mix together all of the dry ingredients in a large bowl.
2. Make a well in the centre of the mixture, then pour the milk in and whisk from the centre out.
3. Warm up a frying pan on medium heat and add a nob of butter or you can use vegetable oil.
4. Spoon the pancakes into the frying pan. They can be as big or as small as you like. Anna's are around 2-3 tbsp and made 12.
5. Keep the temperature at medium as these are thicker pancakes, so will need time to cook.
6. After 1 minute, they should be golden brown. Flip them over as gently as you can, you can use a spatula or a knife, either work!
7. Cook for one more minute then take out and put to one side. Repeat these steps until all pancakes are made.
CARAMELISED BANANAS
1. In a clean frying pan, add your icing sugar on a medium heat and let it melt. Once melted, the colour should be a light brown.
2. Take off the heat add 1/3 of water and stir. Add another 1/3 and stir and then repeat with the last 1/3. You should now have caramel.
3. Add in your sliced bananas and bring to a boil.
4. Take off and serve over your fluffy pancakes.
5. You can also add whipped cream and cinnamon if you really want to spoil yourself!
