Jemma's Strawberry Tiramisu
You will need:
- Dish to build your tiramisu in
- 2 x tins of strawberries
- Approx 24 sponge fingers
- 250g mascarpone
- 120ml double cream
- 50g icing sugar
- 1tsp vanilla extract
Method:
- First, open the tins of strawberries and separate the syrup and the fruit.
- Chop the tinned strawberries and put them to one side.
- Have your dish ready, and begin dipping the sponge fingers in the syrup and line them up in the dish one by one.
- In a separate bowl, add the cream, mascarpone, icing sugar and vanilla and whisk until creamy and thick.
- Layer half of the cream mixture on top of the sponge fingers and add the chopped tinned strawberries on top.
- Repeat the process of dipping the sponge fingers in the syrup and place another layer over the top of the strawberries.
- Place the rest of the cream mixture on top and spread evenly.
- Add sliced fresh strawberries or a topping of your choice on top to decorate, cover with foil and chill for at least 4 hours or if you can overnight.
- Serve straight from the fridge and enjoy!
