Jemma's Strawberry Tiramisu

You will need:

  • Dish to build your tiramisu in
  • 2 x tins of strawberries
  • Approx 24 sponge fingers
  • 250g mascarpone
  • 120ml double cream
  • 50g icing sugar
  • 1tsp vanilla extract

Method:

  1. First, open the tins of strawberries and separate the syrup and the fruit.
  2. Chop the tinned strawberries and put them to one side.
  3. Have your dish ready, and begin dipping the sponge fingers in the syrup and line them up in the dish one by one.
  4. In a separate bowl, add the cream, mascarpone, icing sugar and vanilla and whisk until creamy and thick.
  5. Layer half of the cream mixture on top of the sponge fingers and add the chopped tinned strawberries on top.
  6. Repeat the process of dipping the sponge fingers in the syrup and place another layer over the top of the strawberries.
  7. Place the rest of the cream mixture on top and spread evenly.
  8. Add sliced fresh strawberries or a topping of your choice on top to decorate, cover with foil and chill for at least 4 hours or if you can overnight.
  9. Serve straight from the fridge and enjoy!
