Nancy's Strawberry Tart

Nancy Birtwhistle's delicious and seasonal no-bake strawberry and balsamic tart.


Ingredients:

  • A 23cm sweet shortcrust pastry shell
  • 400g fresh strawberries
  • 100g sifted icing sugar
  • 400ml double cream
  • 1/2 tsp vanilla extract
  • 1/2 tsp balsamic vinegar
  • A couple of twists of ground black pepper

Method:

  1. For a 23cm sweet shortcrust pastry shell you need 400g fresh strawberries. Trim the leaves then add to a bowl.
  2. Measure half a tsp balsamic vinegar, a couple of twists of ground black pepper and a dusting of icing sugar.
  3. Stir to combine then leave for 10 minutes whilst you mix the Chantilly cream. Whisk together the sifted icing sugar, double cream and vanilla extract until it drops off a spoon. Don’t over whisk - it needs to be the consistency of soft butter.
  4. Spread into the case and smooth the top.
  5. Decorate with the strawberries.
  6. Chill until required but remove from the fridge an hour before serving to enjoy the flavours.
