Nancy's Strawberry Tart
Nancy Birtwhistle's delicious and seasonal no-bake strawberry and balsamic tart.
Ingredients:
- A 23cm sweet shortcrust pastry shell
- 400g fresh strawberries
- 100g sifted icing sugar
- 400ml double cream
- 1/2 tsp vanilla extract
- 1/2 tsp balsamic vinegar
- A couple of twists of ground black pepper
Method:
- For a 23cm sweet shortcrust pastry shell you need 400g fresh strawberries. Trim the leaves then add to a bowl.
- Measure half a tsp balsamic vinegar, a couple of twists of ground black pepper and a dusting of icing sugar.
- Stir to combine then leave for 10 minutes whilst you mix the Chantilly cream. Whisk together the sifted icing sugar, double cream and vanilla extract until it drops off a spoon. Don’t over whisk - it needs to be the consistency of soft butter.
- Spread into the case and smooth the top.
- Decorate with the strawberries.
- Chill until required but remove from the fridge an hour before serving to enjoy the flavours.
