Briony's Sprouts Three Ways

Cheesy Smashed Sprouts

Ingredients

  • 8 sprouts, peeled
  • 100g cheddar, grated
  • 50g parmesan, grated
  • 1 tsp dried sage
  • 1 tsp dried oregano
  • 1 tbsp bread crumbs (optional)
  • Salt and pepper

Method

  1. Place the sprouts on a microwave safe plate and microwave on high for 2 minutes.
  2. On parchment paper, create 8 small piles of half of the grated cheddar. Place a sprout on each pile then use the bottom of a glass to press down on the sprouts to squash them flat. Sprinkle over the salt, pepper, herbs and parmesan.
  3. Top each sprout with the remaining cheddar then sprinkle over the breadcrumbs if using. Pop in the air fryer for 8 minutes on 180C (or in the oven on the same temp for 15 minutes. Flip them over then cook for a further 2 minutes until golden brown.

Roasted Sprout Stalk

Ingredients

  • 1 stalk of Brussel sprouts
  • 2 tbsp rapeseed oil
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

Method

  1. Oven on to 180C. MIx together the oil, paprika, salt and pepper. Use a pastry brush to cover all the sprouts in the oil mixture. Pop on a baking tray and cook for 30 minutes unti the sprouts are cooked through.

Brussel Sprout Caesar Salad

Ingredients

  • 400g Brussel sprouts, peeled
  • 100g bacon bits (optional)
  • 5 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp white vinegar
  • 1 tbsp rapeseed oil
  • 1 tbsp parmesan, grated
  • 1 tsp honey
  • 2-3 slices bread (preferably stale)
  • 1 tbsp rapeseed oil

Method

  1. Thinly slice the sprouts. In a pan, fry the bacon bits in a splash of rapeseed oil until cooked through. Add half of the sprouts and cook until charred.
  2. In a bowl, toss together the cooked sprouts with the remaining sliced sprouts. Slice the bread into 2cm cubes, place in a bowl and drizzle over the oil. Mix well then fry in the same pan you used for the sprouts until golden brown.
  3. In a small bowl, mix together the mayonnaise, lemon juice, vinegar, 1 tablespoon of rapeseed oil, parmesan and honey until smooth (use a blender if you want it super silky). Serve the salad topped with the crunchy croutons and creamy caesar sauce.
