John's Gethinator Burger

John is making Gethin's favourite fake-away; a belly-busting breakfast burger with mushrooms, onions and a fried egg! Read on to find out how to rustle up this naughty treat...

Here's what you'll need (serves 4):

  • 2 tbsp groundnut oil
  • 1 tbsp olive oil
  • 500g beef mince 20% fat
  • 4 tsp steak seasoning
  • 200g chestnut mushrooms, thinly sliced
  • 1 onion, thinly sliced
  • 4 slices Gouda cheese
  • 4 eggs
  • 4 brioche burger buns
  • Baby gem lettuce to serve
  • Mayonnaise to serve
  • Salt & Pepper

Here's how to make it:

  1. Put the beef into a bowl. Add the steak seasoning and a good pinch of salt and mix well. Roll into 4 balls.
  2. Heat 1 tbsp of the groundnut oil in a large non-stick frying pan over a high heat. Throw in the chopped onion and mushrooms and a good pinch of salt and pepper. Leave for 1 minute to get some heat into them and then cook, stirring occasionally, for 4-5 minutes until golden.
  3. Transfer to a warm plate.
  4. Reheat the pan over a medium heat and add the remaining groundnut oil. Add the burger balls, leaving plenty of space around each one.
  5. Squish them with a metal turner until just under 1 cm thick. Cook for 5-6 minutes, turning every few minutes, or until cooked through.
  6. Meanwhile, heat the oil in a non-stick frying pan over a medium heat and crack in your eggs. Season with salt and cook until the whites have set.
  7. Turn the heat off under the burgers and top each with a cheese slice. Cover the pan with a lid and leave for 30 seconds – 1 minute to melt the cheese.
  8. Spread your sauce of choice onto the burger buns. Top each with crunchy lettuce and juicy mushrooms. Add the burger patty and your fried egg and tuck in!
