Jemma's Frozen Cheesecake

Vanilla & Chocolate Frozen Cheesecake:

Serves 8 Under £3.50 to make / less than 50p a portion

1. Before you start, make sure you have room in your freezer for your cheesecake!

2. Run your knife under hot water before you slice the cheesecake for a really clean slice.

Ingredients:

360g Digestive Biscuits
200g Chocolate Spread
200g Soft cheese
1L vanilla ice cream
Optional: Strawberries to serve

Preparation:

1. First, crush up the digestive biscuits in a large bowl until they are fine crumbs.

2. Melt the chocolate spread and pour it over the biscuit crumbs, mix until well combined.

3. Press down firmly in a greased, loose bottomed cake tin and place in the freezer whilst you prepare the cheesecake filling.

4. In another large bowl mix together the cream cheese and ice cream. Make sure the ice cream doesn't melt thoroughly so it's safe to freeze again.

5. Pour the mix over the biscuit base and (optional) swirl some more melted chocolate spread on the top of the cheesecake.

6. Pop it back in the freezer for at least 3 hours.

7. When the cake is set, eat immediately. Slice and serve with strawberries.
