Lisa's Easy Pizza

Makes 2 x 9” pizza bases.

DOUGH INGREDIENTS

  • 250g strong bread flour (you can substitute half of this for '00' flour if you have any)
  • 1 tsp salt
  • drizzle of extra virgin olive oil
  • 20g fresh yeast or 10g of dried yeast
  • 155ml lukewarm water

TOMATO SAUCE INGREDIENTS

  • Drizzle of olive oil
  • 1 small onion, peeled and finely diced
  • 2 garlic cloves, crushed
  • 200g good quality tinned chopped tomatoes
  • 2 tbsp tomato purée
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • 1 tsp sugar
  • Salt and pepper

+ TOPPINGS AND CHEESE OF YOUR CHOICE.

METHOD

  1. Sift the flours and salt together and place into a bowl. Make a small well in the centre.
  2. Blend the oil and yeast together in the lukewarm water.
  3. Pour the yeast liquid into the well and gradually start to incorporate the flour with your fingertips to create a soft dough.
  4. Remove the dough from the bowl on to a clean work surface and knead the dough for around 10 minutes until it becomes smooth and elastic.
  5. Then shape the dough into a ball and cover loosely with some lightly oiled cling film or a clean tea towel. Leave to rest for 30 minutes at room temperature, or leave overnight in the fridge.
  6. Next, make the tomato sauce. Drizzle a little olive oil in a saucepan and place over a moderate heat. Add the onions and sweat until softened and caramelised.
  7. Add the garlic and cook for a further minute. Add the remaining ingredients, bring to the boil and then turn to a simmer for approximately 7-10 minutes until the sauce thickens. Stir occasionally.
  8. Season with salt and black pepper and blend until you have a smooth consistency. If you prefer a more rustic sauce, you can skip the blending.
  9. When you a ready to cook your pizzas, pre-heat the oven to 220°C fan.
  10. Knock back the dough and then roll the pizza out to the required size and thickness about the thickness of a £2 pound coin.You can use your hands to push out the dough if you don't have a rolling pin.
  11. Sprinkle some fine semolina or flour over an upside-down baking tray or pizza stone and arrange the rolled out dough on top.
  12. Spread the surface of the pizza dough with a little tomato sauce, and sprinkle over a thin layer of grated mozzarella cheese.
  13. Add the toppings of your choice.
  14. Bake in the pre-heated oven for 10 minutes until the base is crisp and the cheese is golden brown. Top with a handful of rocket and serve immediately.
