Dan Lee's Fried Vegetable Noodles

INGREDIENTS:

  • Instant noodles
  • Oyster and spring onion sauce
  • Light / Dark Soy sauce
  • Ground white pepper
  • Garlic
  • Crushed Chilis
  • Shallot - / Onion
  • Carrots
  • White Cabbage

METHOD:

1. Prep all the vegetables by chopping them - the smaller the better as this will shorten the amount of time it takes for them to heat up.
2. Follow the instructions on the packet of noodles to rehydrate them -- normally this is putting them in boiling water for about 5 minutes.
3. Heat up a frying pan on a medium heat and add the garlic to cook for a couple of minutes. Then add the onion and cook until soft.
4. Once they have a bit of colour, add all the other vegetables and warm through.
5. Add the oyster sauce, soy sauce and some red chilis and mix through
6. Finally drain the noodles and add those, mixing so they are all coated in the sauce.
7. Add a sprinkle of white ground pepper and serve.
