John's Late Summer Family Feast

ULTIMATE CHICKEN WRAP

Serves 6

INGREDIENTS

  • 1kg chicken thigh fillets - no skin or bone
  • 2 lemons
  • 4 cloves garlic, crushed
  • 6 Flatbreads
  • 1 Lettuce
  • 3 Spring onions
  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 tsp chilli flakes
  • 5-6 tbsp olive oil
  • Neutral oil for frying
  • Salt

METHOD

1. Mix the crushed garlic, half the juice of one large lemon, smoked paprika, dried oregano, chilli flakes, olive oil and mix everything together with plenty of salt. You can leave this to marinade for as long as you like.

2. To cook, heat the neutral oil in a non-stick frying pan over a high heat and add the marinated chicken. Cook for 6-8 minutes, turning every 2-3 minutes until golden and cooked through.

3. Slice the chicken up. Add a pinch of salt and squeeze a few drops out of the lemon you used previously.

4. Mix together and start to assemble your wrap with your choice of toppings and enjoy.

TOMATO AND FETA SALAD

Serves 6

INGREDIENTS

  • 2 large tomatoes
  • Half a red onion
  • A few pitted black olives in oil
  • 2 cloves of crushed garlic
  • 1 large lemon
  • Half a block of feta cheese
  • Pinch of oregano
  • 2 tbsp of olive oil

METHOD

1. Slice up 2 huge tomatoes and arrange them on a plate with 1/2 a sliced red onion.

2. Crush 2 cloves of garlic and add 2 tbsp olive oil and the juice of 1/2 a large lemon. Season well and a add a pinch of dried oregano.

3. Whisk your dressing and drizzle over the salad.

4. Crumble over a half block of feta and your pitted black olives and dive on in.
