Jimmy's Beef Stir Fry

INGREDIENTS

  • Velveted beef (sliced)
  • 1 head of broccoli (sliced)
  • ½ thumb of ginger (sliced)
  • ½ tbsp oyster sauce
  • ½ tbsp dark soy sauce
  • ½ tbsp light soy sauce
  • 2 cloves of garlic (crushed)
  • 2 tbsp Shaoxing Wine
  • 1 tsp potato starch or cornflour, mixed with 50ml water
  • 1 tsp sesame oil
  • Medium grain rice to serve

METHOD

  1. First you're going to velvet your beef - rub your beef with cornflour, then add your Shaoxing wine, soy sauce and a little oyster sauce. Leave this in the fridge to marinade overnight.
  2. Next, slice your broccoli then boil and blanch it.
  3. Once you're blanched the broccoli, set it to one side with all of your other prepped ingredients - make sure you're got all your ingredients close to hand as the cook time on this dish is very short and quick.
  4. Heat some oil in a large sided frying pan, and add in your spring onions, ginger and garlic.
  5. You want to keep the pan nice and hot - once your ingredients are sizzling away, add in your sliced velveted beef and it will start to sizzle.
  6. Toss your ingredients in the pan, then add in some more of your oyster sauce, dark soy sauce, and light soy sauce..
  7. Once they've been tossed into the mix, add in your Shaoxing wine and fry your mix for 30 seconds.
  8. Finish off your dish with 1tsp of cornflour mixed with 50ml of cold water to give your stir fry that nice silky texture.
  9. This is also a great opportunity to add a little sesame oil too to give your food that authentic flavour.
