Dr Punam's Mum's Khichdi
Khichdi (feeds 4 as a main meal)
INGREDIENTS:
1 cup Rice
1 cup Yellow or split green moong dal
1 tsp Cumin Seeds
1 tsp Garam masala
1 tsp Turmeric
1 inch Ginger
100g Spinach
Black pepper to taste
Oil
Salt
Coriander (fresh) (to serve)
Ghee (to serve) (optional)
METHOD:
1. Mix 1 cup of rice and 1 cup of dal and wash 3-4 times. Washing helps to remove impurities and flushes out excess amount of starch. You can also add vegetables like carrots, peas, potatoes or spinach.
2. In a pan (or pressure cooker) heat one teaspoon of oil and add the soaked dal, rice, chopped spinach, salt, turmeric and 1 litre of water. In a pan it will take around 30-45 minutes. Stir occasionally and add extra water if required to stop it sticking to the pan. It will be much faster in a pressure cooker – when it starts to whistle, simmer it for 2 minutes and then switch off the heat. Leave it to stand for a minute and then open the lid. Be careful to let the steam out before you open it.
In another pan heat up ghee or oil.
3. Once the oil is heated add the cumin seeds, garam masala, chopped ginger and black pepper and saute well.
4. Add to the rice and dal and mix.
5. You can adjust the consistency according to your taste.
NOTE - You can adjust the consistency according to your taste. Add coriander to garnish.
