Briony's Spiced Carrot Soda Bread

Ingredients:
- 600g plain flour
- 1.5 tsp mixed spice
- 2 tsp bicarbonate of soda
- 1 tsp salt
- 500ml buttermilk (or 500ml of milk and a tablespoon of lemon juice, mix them together and leave for a few minutes until it thickens)
- 200g grated carrots
Method:
- Preheat the oven to 180°C fan/200°C.
- Mix the flour, mixed spice, salt and bicarb in a bowl.
- Slowly tip the buttermilk into the flour and mix until it forms a soft dough. Add the grated carrots and mix. Tip onto a floured surface and knead briefly.
- Shape the dough into a round loaf. Place straight onto a baking tray and slash an X in the top with a knife. Bake for 40-45 minutes until golden brown.
