Clare's Healthy Chocolate Mug Cake

Ingredients:

1 medium free-range egg, beaten well
4 soft pitted dates, finely chopped
25g ground almonds
1 tbsp unsweetened cocoa powder
¼ tsp baking powder
1 square dark chocolate (at least 70%) (around 5g)
Handful of fresh raspberries to serve (optional)

Plus 1tbsp coconut oil

Method:

  1. If solid, melt the coconut oil in a mug in the microwave for a few seconds.
  2. Add dates, egg, ground almonds, cocoa powder and baking powder to the mug and mix well with a fork. Add a tsp or two of water if needed to mix thoroughly.
  3. Submerge the chocolate into the middle of the mix and microwave on high for 60 seconds (this may differ depending on your microwave wattage). The cake will have risen and be shrinking away from the edges of the mug.
  4. Turn the cake out and cut in half to reveal the gooey centre. Split between two and serve with fresh berries.
