George’s biggest influence in the kitchen is his dad who owned a Greek restaurant when he was growing up. His dad is Greek Cypriot so to him everything revolved around the dinner table which would always bring the family together. George loves to cook Cypriot food as well as taking inspiration from North Africa and the Mediterranean.

His current favourite chef is Lee Tiernan due to his work at St John for many years as well as his crazy venture, Black Axe Mangal, which experimented with spice, rock music, drinks and overall fun. His other favourites include Theo Randall, Josh Eggleston, Nathan Outlaw and Tommy Banks.

George has worked in recruitment for the past five years and is now in a managerial role. In his free time he likes to go to the gym and play both football and rugby. Music is another passion of his and he has been to Glastonbury festival for the past two years. As well as the music, he believes the food there is incredible. George would one day like to have his own restaurant.
