Alan Carr is the restaurant manager for P & O's cruise ship, the 'Oriana.'

We follow him during preparations for the company’s 175th anniversary which includes the gathering of the entire fleet to take a salute from the Princess Royal.

We follow Alan as he co-ordinates catering operations including a VIP reception and celebratory tea with Princess Anne.

Every aspect of the visit is planned in minute detail to ensure it runs like clockwork.

One of Alan’s challenges is to get a specially commissioned anniversary cake on board on board the cruise ship Oriana for the reception without it getting damaged.

Weighing 35 kilos and standing four tiers high, the plan is to deliver the cake on the quay, and then carefully wheel it up a steep gangway.

The cake must also be double-checked for security risks.

The challenge for Alan is to get the special cake on board before the Princess Royal arrives for tea, but there are a few hiccups en route.
