'The assumption of French superiority was so strong'

We hear about the rivalry between the African and French, who mixed in the US. Both lay claim to the origins of the classic Creole dish, gumbo. Journalist Lolis Elie tells the Βι¶ΉΤΌΕΔ's Dan Saladino that the dish's influences are indeed African - but that is blighted by the assumption that something so tasty could only have blossomed from France's culinary superiority.
