Baked Bean soup with Soda Farls

Baked Bean Soup


Ingredients
1 tbsp veg oil
1 small onion peeled and diced
1 stick of celery diced
1 carrot peeled and diced
1 clove of garlic chopped
1 tin of chopped tomatoes
1 tin of baked beans
Salt and pepper for seasoning
Pinch of sugar (optional)
400ml stock (chicken or veg)

Method
In a large soup pot, add 1 tbsp of oil in, then the diced onion, celery, and carrot and fry off for 5 minutes until they start to become fragrant
Add in the garlic and stir
Allow to cook for a couple of minutes
Add in the rest of the ingredients – chopped tomatoes, baked beans and chicken stock
Let the pot simmer with the lid on for 30 minutes until all the vegetables are soft
Blitz with a hand blender until smooth or desired consistency
Serve with cheesy soda farls

Cheesy Soda Farls

Ingredients
250g self-raising flour
1 tsp of baking soda
225g whole milk
Approx. 1 tbsp of lemon juice
100g mature cheddar
Salt and pepper

Method
Put your flour, and baking soda into a large mixing bowl
Add a pinch of salt to buttermilk add to dry ingredients and mix
Grate cheese into the mixture and combine until it forms a dough
Tip the mixture out onto a floured surface and form a round about 2 cm thick
Cut into quarters
Heat a large dry frying pan and dust with a sprinkle of flour
Cook the farls on a medium heat for around 8 - 10 minutes on each side until golden
Be careful not to burn and turn down the heat if necessary
You will know the farl is done on each side if you tap it and it has a hollow sound
Finally stand the farls up on their edges and cook for around 30-60 seconds on each side.
These can be left under a tea towel to keep warm until needed, or made in advance and toasted and served with lots of butter
