Pulled Pork

BBQ Sauce
Ingredients
150g ketchup
50g brown sugar
50g honey
Approx. 100ml -150ml vinegar (depending on how sharp you like it)
1 tsp garlic powder
1/2 tsp ground black pepper
1 tsp mild chili powder - optional
2 tbsp Worcestershire sauce - optional
1 tsp paprika – optional
Water

Method
Add the ketchup, brown sugar, honey, garlic powder, pepper, chilli powder, paprika and Worcestershire sauce to the pan
Add in 150ml of vinegar to the saucepan
Bring the ingredients to a boil and lower heat
Simmer for a further 5 minutes
Taste - you may want to add more vinegar for sharpness or sugar or honey for more sweetness
If it gets too thick add some water to thin down

Pulled Pork
Ingredients
2kg of pork shoulder
2 tsp paprika
2 onions finely sliced
½ tsp salt
¼ tsp ground black pepper
Cheese for serving

Method
In a slow cooker place the onions into the bottom of the bowl
Season the pork with paprika, salt and pepper
Put the pork shoulder on top of the onions and put the lid on – cook on the low heat setting for 8 hours
If you don’t have a slow cooker, use a heavy-duty casserole dish with a lid or a cast iron pan and slow cook at 180C in the oven for 3 hours
After 3 hours lift out the meat (be careful it will fall apart) and place into a bowl
Shred the meat with a knife and fork
Add the onions to the meat and sauce mixture with some of the liquid it has been cooking in for extra flavour (optional)
Add in the BBQ sauce until coated to your liking
Serve the pulled pork in brioche buns, with salad, cheese and coleslaw

Coleslaw
Ingredients
½ a small red cabbage finely shredded
¼ Red onion finely grated
1 large carrot grated
2 large tbsp of mayonnaise
1 tbsp of white wine vinegar
salt and pepper to season

Method
Place the cabbage, red onion, carrot, mayonnaise, white wine vinegar, into a bowl and mix
Season to taste
