The Woman's Hour MuffinIngredientsChocolate (because we're sweet) Banana (for energy) and Walnut (our strong centre)Makes 12 150g/5oz wholemeal self-raising flour 150g/5oz white self-raising flour 150g/5oz soft dark brown sugar 55g/2oz cocoa powder 25g/1oz oatmeal 115g/4oz chopped walnuts 3 medium sized ripe bananas 75ml/3floz sunflower oil 200ml/7floz orange juice 3 medium eggs, beaten 12 muffin paper cases MethodPre heat the oven to 200c/400f/gas 6Place dry ingredents in a bowl Mash bananas in a bowl using a fork, till slightly lumpy, add oil, orange juice and beaten eggs, mix into dry ingredients and beat with a wooden spoon. The mixture should be runny. Line a deep muffin tray with paper cases and spoon or pour in the mixture so it comes fairly near the top of each case. Bake for 20 minutes until well risen or till a cocktail stick inserted in the centre comes out clean. Allow to cool in the tin for 5 minutes then turn onto a wire rack and cool completely.
