Nadiya Hussain's Halloumi and Spinach Curry

1. Soak halloumi in hot water. 2. Shallow fry until crispy. 3. Fry onions at a low heat until translucent and soft. 4. Add ground spices and tamarind. 5. Blend spinach and add to the onions. 6. Mix in the halloumi.

Nadiya Hussain's Halloumi Curry with Coconut Sambal
A variation of the recipe from Nadiya's Family Favourites (Penguin Michael Joseph).Â

- 4 tbsp olive oilÂ
- 2 x 250g blocks of halloumi cheese, cut into 1 cm cubesÂ
- 6 cloves of garlic, choppedÂ
- 2 red onions, dicedÂ
- 2 red peppers, dicedÂ
- ½ tsp saltÂ
- ½ tsp ground turmericÂ
- 1 tsp cumin seedsÂ
- 1 lemon, zest and juiceÂ
- 300ml waterÂ
- A large bunch of fresh coriander, choppedÂ
- Cooked basmati rice, to serve
- 150g desiccated coconutÂ
- 1 clove of garlicÂ
- 1 lime, zest and juiceÂ
- A large handful of fresh corianderÂ
