The Marou chocolate company grows all its ingredients in the cacao plantations of the south. They have a cocoa butter press called Lord Humungus – and with increased production they’ve had to quadruple their roasting capacity. The final product is fantastic – and it’s available in some of the world’s top retail outlets. Vivienne Nunis has been talking to Sam and Vincent – and meeting their invaluable partners in this region’s immaculately maintained plantations.
