Brazilian Ribs

Brazilian Style Pork Ribs

Ingredients

  • 2kg pork ribs
  • Salt and pepper
  • 100ml cider or water
  • Juice 2 limes and zest of 1
  • 75g soft brown sugar
  • 50ml balsamic vinegar
  • 1 teaspoon chopped red chilli
  • 1 teaspoon ground coriander
  • 2 tablespoons honey

Method

Set oven to 180oc.

Place the ribs in a roasting tray and season with salt and pepper.

Pour on the cider or water, cover with foil and cook for about 2 hours or until ribs are fork tender.

Whisk the lime juice, zest, sugar, vinegar, chilli, coriander and honey together. Mix the cooked ribs into this cool and then chill to marinate for at least 4 hours.

Remove ribs from marinate and cook on the barbecue for about 3 minutes each side, basting with the left over marinade.

Smoky Grilled Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 1 teaspoon smoked sweet paprika
  • ½ teaspoon salt
  • 1 tablespoon oil
  • 2 red onions, peeled, halved through root and sliced thinly
  • 1 tablespoon cider vinegar
  • 2 teaspoons sugar

Method

Scrub the potatoes and slice into 3cm thick pieces.

Mix the paprika, salt and oil together.

Place the potatoes on a lightly oiled baking tray and brush with the paprika mix. Cover with foil and bake for about 45 minutes or until soft.

Meanwhile toss the onions in the vinegar and sugar and leave for 30 minutes.

Remove foil from potatoes and cool for 10 minutes.

Place on barbecue to mark.

Place on a plate and scatter over the onions.
