Mayonnaise
This basic homemade mayo is delicious to serve as it is, or it can be used as a base to make different sauces like tartare or Caesar dressing.

Ingredients
For the mayonnaise
- 2 free-range egg yolks
- 1 tsp Dijon mustard
- 20ml/Β½fl oz white wine vinegar
- squeeze lemon juice
- 250ml/9fl oz vegetable oil
- 1 clove garlic, chopped
Method
Place the egg yolks in a large bowl and add the mustard, vinegar, lemon juice, garlic and mix. Gradually whisk in the oil until you have a thick mayonnaise.
