Is summer finally here? Maybe, just maybe, it's time to try out our homemade ice cream - perfect for cooling off on a hot day.

As well as a delicious, dairy-free treat, this strawberry and banana ice cream recipe is a great way of adding more fruit into your child's day and helping little hands get involved in the kitchen. Mashing and mixing might get a little messy, but it's loads of fun too!

Specialist children's dietitian Angharad Banner has created this recipe using strawberries and bananas, but ask your child if they want to add a dash of another favourite fruit into the mixing bowl. Making choices in the kitchen helps to build their confidence.

Ingredients

  • 160ml coconut cream

  • 2 medium-sized bananas

  • 8 medium-sized strawberries

You will need

  • 2 mixing bowls

  • A whisk or fork

  • A table knife

  • A masher

  • Small containers or ice cream moulds

Method

1. Empty the contents of the coconut cream into a large bowl and whisk until you have a thick 'double cream' consistency

2. Peel and slice the bananas then place in a separate bowl and mash

3. Wash and remove green stalks from the strawberries

4. Slice the strawberries into quarters then add to the mashed banana

5. Mash the strawberries into the mashed banana

6. Add the coconut cream and mix together

7. Place the ice cream into small containers (weaning pots are perfect), or if you have them, ice cream moulds

8. Freeze for 6-8 hours

9. Enjoy!
