Pumpkin soup

If you've been hollowing out your Halloween pumpkin and are wondering what to do with the leftovers, Βι¶ΉΤΌΕΔ Radio Suffolk breakfast presenter Mark Murphy has the perfect answer.

On a recent trip to Germany Mark's friend Wode suggested he tried some of his homemade pumpkin soup.

After tasting it Mark declared this to be the best pumpkin soup recipe in the world...ever!!

Since his return to the UK Mark has been buying up pumpkins and encouraging his wife, fellow Βι¶ΉΤΌΕΔ Radio Suffolk presenter Lesley Dolphin, to help him cook up gallons of the stuff.

So fancy trying it out yourself? Here's Wode's pumpkin soup recipe:

Ingredients

  • one pumpkin (Hokkaido, orange);
  • potatoes - half the weight of the pumpkin;
  • carrots - half the weight of the pumpkin (or more);
  • onions (2-4, as you like);
  • half a chili;
  • juice of two oranges;
  • 1.5 litres of vegetable stock; and
  • olive oil.

Cooking instructions

  1. Cut the onions into little pieces and fry them in olive oil.
  2. Cut the pumpkin into small dices of about 1 cm, removing the cores.
  3. Cut the potatoes and carrots into dices.
  4. Add all the pumpkin, potatoes and carrots to the onions and stir until everything is a bit pre-fried.
  5. Add the vegetable stock and the chili (which you cut into tiny pieces) and simmer for 20 minutes.
  6. Puree the soup to the wanted consistency and add the orange juice.
  7. Serve. Or bathe in it.
  8. You might add a bit whipped cream or creme freche.
