Savoy Cabbage Thoran

Ingredients

serves 4

3 tablespoons oil
2 teaspoons mustard seeds
10 curry leaves
3 teaspoons urad dal
2 onions, finely chopped
2.5cm/1 in piece fresh root ginger, finely chopped
1 teaspoon turmeric powder
1 teaspoon chilli powder
250g/9oz Savoy cabbage, finely shredded
salt

Method

Heat the oil in a large frying pan. Add the mustard seeds and, as they begin to pop, add the curry leaves and urad dal. Stir-fry until the urad dal turns golden.

Add the onions and cook for 5 minutes or until the onions are soft. Mix in the ginger, turmeric and chilli, then add the Savoy cabbage and some salt.

Sprinkle a little water into the pan, stir well, then cover and cook over a low heat for 15 to 20 minutes, stirring occasionally. The dish is ready to serve when the cabbage is tender.
