Momma Cherri's Corn Bread
Ingredients

1 cup (4 ozs, 120 g) sifted white flour
1 cup (4 ozs, 120 9) yellow cornmeal medium
1 Tbs baking powder
½ tsp salt
½ cup sugar (optional, but better if you add it, cornbread should be a little sweet)
1 large egg
1 cup milk (full fat, but semi skimmed is also good)
½ cup melted butter





Method

Set your oven to 425 degrees or gas mark 7. Place the butter in your baking pan and place in the hot oven to melt. Be careful not to burn the butter. Remove once melted.

Combine all the dry ingredients and make a well in the center. Add the egg, milk and melted butter. Combine all together trying to work fast so that the butter doesn't harden.

Pour mixture into warm baking tray and place in oven. Cook for about 25 minutes or until the bread has risen and is a golden brown.

Serve immediately with butter and jam, (if you have a sweet tooth) Enjoy. This bread is great with gravy, meats, fish, or on its own.
