Pa Am TomaquetIngredientsServes 4To Buy/Find 4 chunks bread from a crusty country loaf 4 garlic cloves, skin on 4 large ripe, juicy tomatoes sea salt estate-bottled, extra virgin olive oil, for drizzling MethodTo Prepare/CookTake the gear needed for a fire on the spot: portable barbecue, gas-fired element or aromatic wood. Get the relevant equipment to the heated temperature or build the fire to hot and crackling. Toast the bread, both sides, over the heat. Crush each garlic clove and use it to rub garlic all over one side of the toast. Now rub squashy tomato flesh over too; if it looks pink and messy: par for the course. Add salt to taste and a generous trickle of oil. To Present Eat each sandwich while warm, aromatic and crusty. You may add more salt and oil to the tomato debris and eat that too.
