Audrey Saunders' cocktail recipesOLD CUBAN22 1/2 ml Fresh Lime Juice 30ml Simple Syrup (not Gomme Syrup - simple syrup is simply 1/2 caster and 1/2 water) 45ml Bacardi 8 year Rum 6 fresh mint leaves Champagne Angostura Bitters Add the limejuice, simple syrup and mint leaves into a mixing glass. Press with a muddler (or wooden spoon). Add 2 dashes of bitters and the rum. Add ice and shake well. Strain into a martini glass and top up with champagne. GRAPEFRUIT DAIQUIRI (non-alcoholic) 22 1/2ml Fresh Lime Juice 30ml Simple Syrup 60ml Grapefruit Juice 2 dashes Angostura Bitters* Add all the ingredients into a mixing glass with ice. Shake well and strain into a rocks glass filled with fresh ice. Garnish with a lime wedge. * note - The Bitters do contain alcohol but like using vanilla extract in a cooking recipe, the measure is negligible. GINGER BEER Βι¶ΉΤΌΕΔmade Ginger Beer (approx 1Β½ hours prep time) THIS RECIPE YIELDS 1 GALLON OF GINGER BEER (approx 3 1/2 litres) 1 gallon water 1 pound gingerroot The juice of 2 limes ΒΌ cup of LIGHT brown sugar In a large, pot, bring water to a boil. While you are waiting for water to boil, place ginger into a food processor. Add approx a cup of hot water from the gallon that is boiling (this makes processing the ginger easier). Process until ginger is a mulch-like puree. Wait for the water to come to a full boil, and pour the ginger puree back into the hot water. Add the lime juice. Cover and let stand for one hour. Add the light brown sugar, and stir well to dissolve. Strain the liquid through a fine strainer or a paper coffee filter, and let cool. Pour through a funnel into containers. It can store for up to 2 weeks (in the refrigerator), but try to use when fresh, as the strength of the ginger fades over time, and the ginger beer will eventually start to ferment. Ginger sediment will sink to the bottom of the container, which is completely normal. Shake before using. GINGER BEER DAIQUIRI 22 1/2 ml fresh lime juice 40 ml simple syrup 50 - 60 ml homemade ginger beer dash bittersΒ (optional) Measure all the ingredients, add ice, shake well, and strain into a rocks glass.
