Gastronomy of Italy Part 3 Woman's Hour continues its series on the very different regional cuisines of Italy in the company of Anna del Conte, author of Gastronomy of Italy.

Today we visit Venice - the land of risotto, not pasta, where fishes come from the lagoon, and where the first fork was used in the eleventh century.
When Venice was an Island Republic, it was a great trading nation bringing spices from the Orient to Europe for the first time, and these are featured in today's dish - Sogliole in Saor (Sole Fillets in a Sweet-and-Sour Sauce).
