Dipped beef cheek sandwich
This is a stew masquerading as a sandwich. It’s even got a layer of mash in between the beef cheek and the bread part sandwich. Not really packed lunch appropriate, and definitely needs to be eaten with a knife and fork. Nonetheless, this is about as satisfying as a sandwich can get. Perfect for a cold winter’s day, when you’re roasted out, but still want something that’ll fill you to bursting.Â
Ingredients
·        2 beef cheeks - ask your butcher to remove the sinue from them
·        Celery
·        Onion
·        Flowery potatoes for the mash
·        Salted butter
·        Crème fraiche
·        Horseradish sauce
·        Gherkins sliced
·        Crispy onions

To make your beef cheek stew place both cheeks go into a pan with chopped up celery and onion and about a pint of water. Put on the hob on a very low heat and cook for approximately 6 hours. If you’ve got a pressure cooker it’ll take about 2 hours.Â
Whilst the stew is cooking, make your mash. Boil your potatoes until you can get a knife through them. Drain and then put back in the dry pan in order to get all the steam out. Put through a ricer if you’ve got one or mash until smooth. Then get about half as much butter weight wise as you’re mash. Whip with a dollop of crème fraiche and then add to the mash.Â
Once the cheeks have tenderised, shred the meat apart into the gravy and cut your bread into slices.Â
Place a layer of mash onto the bottom slice of bread, cover in your beef cheek stew. Allow some gravy to cover the bottom slice of bread. Add your top slice of bread.Â
Add some water to your beef cheek stew and add a spoonful of this to your sandwich.Â
Garish the sandwich with the horseradish sauce, crispy onions and gherkins.
