Vegan pancakes

These stackable pancakes are so easy to prepare and make and totally delicious!

Serves 4

Ingredients

  • 2 cups of Self-raising flour
  • 1tsp Baking Powder
  • 1tsp vanilla essence
  • Β½ cup sugar
  • Roughly 1lt soy milk
  • Optional: blob of vegan mincemeat or fruit compote or high fruit content jam

Method

Sift your flour and baking powder into a large bowl.

Mix in the sugar.

Then slowly add the soy milk whisking whilst you do. Add enough so that you have a thick batter.

Then heat some oil in a frying pan or flat griddle. Keep it on the lowest heat.

When the oil is bubbling spoon a large tablespoon worth of batter mix in to the pan. Repeat until you’ve got as many pancakes as the pan will fit. You’ll want two or 3 per person.

Cook slowly on aΒ low heat. Once youΒ the underside is looking lovely and golden, put a blob of vegan mincemeat, fruit compote or even a high fruit content jam in the centre of the uncooked side and then flip. The sugar will caramelise and the flavour will permeate the whole pancake.

Once both sides are lovely and golden, and the pancake has cooked all the way through, serve with fresh fruit and soy or coconut yoghurt.
