Cuir na núdail isteach in uisce bruite i mbabhla agus fág iad le bogadh go ceann 4 bhomaite.
Cuir roinnt ola piseanna talún isteach i bhfriochtán teppanyaki (nó d’fhéadfá gnáthfhriochtán a úsáid).
Tosaigh leis an phiobar dhearg i slisíní, cuir na slisíní oinniúin agus gairleoige isteach, agus ansin na plúiríní brocailí, an chillí dhearg, agus dornán caisiúnna.
Nuair a bheidh na glasraí beagnach réidh cuir i leataobh iad, taom na núdail agus cuir iad ar an fhriochtán taobh leis na glasraí go ceann roinnt bomaití.
Cuir stealladh beag den anlann soighe ar na núdail.
Cuir deoir den anlann oisrí i lár gach cinn de na miasa freastail. Cuir na núdail sa mhias, maisigh le duilleoga lus an choire ar an bharr. Cuir na glasraí thart timpeall ar na núdail agus dáil amach iad.

Asian Stir-Fried Vegetables with Rice Noodles made by Éamonn Ó Catháin

INGREDIENTS

Noodles
Ground nut or peanut oil
Oyster sauce
Soya sauce
2 heads of broccoli
2 cloves of garlic
100g cashew nuts
1 red pepper
1 red chilli
1 onion

METHOD

Put noodles into boiling water in dish & leave to cook for 4 minutes.
Put some groundnut oil on a large teppanyaki (or you could use a large frying pan).
Start with the sliced red pepper, add sliced onion, sliced garlic, then bite-sized broccoli florets, the red chilli, a sprinkle of cashew nuts.
When the vegetables are nearly cooked move them to the side, drain the noodles & place them on the teppanyaki beside the vegetables for a few minutes.
Pour a little soya sauce over the noodles.
Place a drop of oyster sauce in the middle of a serving dish. Put the noodles in the dish, garnish with a few coriander leaves on top. Surround the noodles with the vegetables & serve.
