The Ark of Taste: Georgian Qvevri Wine

Georgia, the birthplace of wine, boasts an 8000-year-old tradition of wine making. Against a backdrop of conflicts in Georgia's often troubled history, traditional wine making has remained a rare constant in Georgian life. Even now, alongside a growing commercial market, traditional producers continue to make natural wines in 'Qvevri', egg-shaped terracotta vessels used to store and mature the wine. But the decline of skilled craftsmen capable of making these vessels is putting this craft at risk, which could not only mean the loss of an age-old wine recipe, but also the loss of the folk songs and mealtime rituals which have grown up with this tradition.
