Ingredients

  • 9oz crushed/blended Hazelnuts
  • 7oz dark fairtrade chocolate
  • 6oz salted English butter
  • 6 eggs separated.

Hazelnut spread

  • Clotted cream
  • Hazelnuts

1.Crush or blend the Hazelnuts, leaving a few crunchy bits.

2.Melt the butter and chocolate together in a glass bowl over a simmering pan of water (don't let the bottom of the glass bowl touch the water) whisk gently and leave to stand for 5 minutes.

3.whisk the egg whites to form stiff peaks/clouds.

4.whisk the sugar and remaining egg yolks together until light and creamy.

5.Add the Hazelnuts to the melted chocolate and butter. combine

6.in a large bowl add the chocolate Hazelnut mix to the egg yolks and sugar. combine.

7.fold in (gently) the fluffy egg whites.

8.poor mixture into two lined 8" sandwich tins.

9.bake gas mark 6 or 160 fan for approximately 30 mins (keep an eye on it and when its ready it will form a crust and be firm to the touch). leave to cool in the tins for 15 mins then turn out onto a wire rack.

10.sandwich together with lashings of Hazelnut spread and serve with clothed cream.
