Laura with Frances Cooley and her strawberry cream sponge cake
Ingredients
To make an 8" round cake.
For the strawberry coulis
- 100g/1lb 2oz strawberries, hulled and chopped
- Β· 50g/1lb 2oz caster sugar
- Β½ lemon
For the sponge cake
- 250g/9oz butter, at room temperature, plus extra for greasing
- 250g/9oz caster sugar
- pinch of salt
- Β· 5 duck eggs
- 250g/9oz self-raising flour , plus extra for dusting
For the strawberry decorations
- 100g/3Β½oz sugar
- strawberries, stemmed left on
- icing sugar , for dusting
For Chantilly Cream
- 200ml whipping Cream
- 1tsp Vanilla extract
- 50g Icing Sugar
Chocolate Decoration
- Tempered Chocolate of your choice
- Silicone or Parchment paper
- Piping bag
