One of the big growth areas in the food industry is mass catering for big events. Particularly the mass-catering of very fancy food, often as part of a hospitality deal.
Every big sporting event has it, from the Super Bowl which is offering next year "pre-game brunch with champagne and cocktails" to the World Cup in South Africa where there will be "a world class hospitality service with a main course before or after the match, a half-time snack, pre and post match entrees and hors-doeuvres along with an open bar and fine beverages".
But how do you cater for thousands of people who've paid good money - or rather whose hosts have paid good money?
And how does this changing food industry actually work. Wherever you are, a food revolution has happened in the last twenty years.
