Bake Off star Stephen Carter Bailey's Mars Bar and Apple Brownies






Ingredients;

路聽聽聽聽聽聽聽 150g unsalted butter

路聽聽聽聽聽聽聽 100g chocolate 鈥 dark chocolate or 2 regular Mars Bars

路聽聽聽聽聽聽聽 85g plain flour

路聽聽聽聽聽聽聽 录 tsp baking powder

路聽聽聽聽聽聽聽 2 tbsp cocoa

路聽聽聽聽聽聽聽 Pinch of salt

路聽聽聽聽聽聽聽 3 large eggs

路聽聽聽聽聽聽聽 100g caster sugar

路聽聽聽聽聽聽聽 50g light brown sugar

路聽聽聽聽聽聽聽 1 tsp vanilla extract

路聽聽聽聽聽聽聽 2 apples 鈥 any eating apple will do, but Granny Smith work best

路聽聽聽聽聽聽聽 2 regular Mars Bars

Method;

In a double boiler, slowly melt together the butter and chocolate. If you use Mars Bars, they will look a bit lumpy, but don鈥檛 worry. Set this aside to cool.

Grease and line a 6x12鈥 rectangular cake tin, or two 6鈥 tins 鈥 anything in this sort of size will suffice. Preheat your oven to 180掳c or gas mark 4.

Sift together the flour, baking powder, cocoa and salt into a bowl an set aside.

Peel, core and dice your apples and chop up the Mars Bar pieces into 陆 inch pieces. It鈥檚 easier to do this if the Mars Bars are cold from the fridge.

Add your sugars, eggs and vanilla to a mixing bowl and use an electric beater to whisk them together for a few minutes, until pale and fluffy. You can do this in a stand mixer if you have one. If there are lots of hands to help, then you can take it in turns with a hand whisk.

Pour the cooled chocolate and butter mix in slowly and continue to whisk until it鈥檚 fully incorporated.

Toss the apple and Mars Bar pieces in the dry mix, ensuring each piece is covered 鈥 this will stop them clumping together and sinking.

Fold this mix into the chocolate, butter, egg and sugar ensuring everything is combined. Pour this mix into your tin/s and bake in the centre of your oven for 25 minutes, or until they spring back and have a soft centre.

Place the tins on a cooling rack for 10 minutes, then turn the brownies out onto the racks and allow to cool to room temperature. Cut your brownies into any shape you want and enjoy with cream, ice cream or just on their own.

You can always add 50 grams of nuts if you fancy it. If you don鈥檛 have Mars Bars, then you can use Snickers鈥.why not experiment with your favourite chocolate bars.
