Spring is the season for Hop Twiddling. Sarah Swadling finds out what it is, and how it鈥檚 done, at Hogs Back Brewery鈥檚 hop garden near Farnham. Surrey was once home to hundreds of acres of bines, but now there are only two growers left, including brewer Rupert Thompson. He tells Sarah why he wanted to use the most local hops possible including the Farnham White Bine, bought back from the edge of extinction.
