Sirloin Steak Marinated with Mixed Herbs

mins + marinating time 2hrs – 24hrs

Ingredients
A handful of mixed herbs, such as lemon thyme, rosemary or bay
Grated zest 1 lemon
1 garlic clove, chopped
3 tbsp olive oil
Sea salt and freshly ground black pepper
4 sirloin steaks
Method
1.ÌýÌýÌý Chop the herbs and put them into a large polythene bag with the lemon zest, garlic, olive oil and seasoning.Ìý Add the steaks, seal the bag and leave to marinate for at least 2hrs and up to 24hrs.
2. Ìý Brush a frying pan with a little oil.Ìý Heat until very hot.Ìý Add the steaks.Ìý Fry the steaks according to how you like them:Ìý 1½ mins each side for a rare steak; 2 mins for medium; 2½ mins for well done.
Nettle Fritters
Serves 4
Prep time: 10

Cooking time:
5 mins approx. per batch
500g nettle tips
4 tbsps plain flour
4 eggs
2 tbsps Parmesan cheese, freshly grated
Sea salt and freshly ground black pepper
120ml olive oil
Method
1.ÌýÌýÌý Wash the nettle tips well, then blanch them in boiling salted water for 2 mins.Ìý Drain and refresh in cold water.Ìý This improves the colour and flavour.Ìý Drain again and squeeze out the excess water.Ìý Mix the nettles with the flour, eggs, Parmesan and a little seasoning.
2.ÌýÌýÌý Heat the oil in a frying pan and use a dessert spoon to drop the mixture into the pan i.e. one spoonful per fritter, frying a few at a time and turning them over when golden.ÌýÌý Drain on kitchen paper, season and serve.
